In a small bowl, whisk together the almond meal and flour. 2. In a medium saucepan, combine 1/2 cup of the butter, granulated sugar, brown sugar, corn syrup, and honey over medium heat. Bring to a boil, stirring the entire time. 3. Remove from the heat and stir in the vanilla until combined. Stir in the almond meal mixture until just combined. Let cool and thicken for 10 minutes, stirring once halfway through. 4. Meanwhile, preheat the oven to 350 F. Line two large baking sheets with parchment paper. 5. Using a teaspoon-sized cookie scoop, drop scant spoonfuls of dough onto the prepared baking sheets, spacing them at least 3 inches apart. You will need to set some aside for further batches. 6. Bake, one sheet at a time, for 4 to 7 minutes or until evenly golden brown all over. Watch closely! Different ovens give varying baking times. Let cool on baking sheet for 5 minutes or until they firm up, then carefully transfer the cookies to wire racks to cool completely. Ingredients 1 cup almond meal 1/2 cup flour 1/2 cup + 1 Tbsp salted butter, divided 1/2 cup granulated sugar 1/2 cup packed brown sugar 2 Tbsp dark corn syrup 2 Tbsp liquid honey 2 tsp vanilla extract 1 cup semisweet or milk chocolate chips 7. Place the chocolate chips and remaining 1 tablespoon of the butter in a large microwave-safe glass measuring cup. Microwave on medium power in 20-second increments, stirring after each, until the chocolate chips have almost completely melted (a few lumps are okay). Stir until fully melted and smooth. 8. Dollop chocolate onto a cookie, then gently top with another. Repeat with the remaining cookies and chocolate, then let cool completely. 9. Store in an airtight container in layers, with parchment or waxed paper between each layer, at room temperature for up to 3 days, in the fridge for up to 1 week, or in the freezer for up to 3 months.
